Using a sharp chef's knife on a cutting board, halve and pit the ripe avocados. Scoop the green flesh directly into the food processor bowl, discarding any brown bruised spots.
- Load the Ingredients
Add the cocoa powder, maple syrup, almond milk, vanilla extract, sea salt, and optional espresso powder into the food processor bowl.
- Initial Pulse and Puree
Pulse 5 to 6 times to break down the avocado, then blend on high speed for 30 to 45 seconds.
- Scrape Down the Sides
Stop the processor and use a flexible silicone spatula to scrape down the lid, sides, and bottom corners, pushing any dry cocoa powder into the blades.
- High-Speed Puree for Silky Sheen
Blend on high for another 45–60 seconds until the pudding is ultra-smooth, glossy, and completely free of green specks. Stream in 1–2 extra tbsp of milk if a thinner consistency is desired.
- Portion, Chill and Garnish
Divide evenly into glass ramekins using your silicone spatula. Chill in the refrigerator for 20–30 minutes to set into a thick mousse. Garnish with fresh raspberries and cacao nibs, then serve.
