- 1/3 cup Onion, finely chopped
- 1/3 cup Carrot, finely chopped
- 1 tsp Kosher salt, divided
- 2 large Eggs, lightly beaten
- 1 pound Large raw shrimp, peeled and deveined
- 2 (8-ounce) packages Pre-cooked microwavable brown rice
- 3/4 cup Frozen green peas
- 1 tbsp Soy sauce
- 1 tsp Rice vinegar
- 1/4 tsp Freshly ground black pepper
- 1 tbsp Toasted sesame seeds (optional), or as desired
- 1/4 cup Sriracha mayonnaise (optional), or as desired
- 1 scallion,sliced (optional), or as desired
Notes
- Preheat your air fryer to the appropriate temperature.
- In a large skillet, heat the canola oil over medium heat. Add the chopped onion, carrot, and half of the kosher salt. Cook for about 3-4 minutes until the vegetables are tender.
- Push the vegetables to one side of the skillet and pour the lightly beaten eggs onto the other side. Stir the eggs gently until they are scrambled and cooked through.
- Add the raw shrimp to the skillet and cook for 2-3 minutes, or until they turn pink and are cooked thoroughly.
- Meanwhile, microwave the pre-cooked brown rice according to the instructions on the package.
- Add the microwaved brown rice, frozen green peas, soy sauce, rice vinegar, remaining kosher salt, and black pepper to the skillet. Stir everything together and cook for an additional 2-3 minutes, allowing the flavors to meld.
- Once the fried rice is cooked, transfer it to the preheated air fryer basket. Cook for about 5 minutes, shaking the basket halfway through, until the rice is crispy and heated through.
