  • 1 pound Large raw shrimp, peeled and deveined
  • 2 (8-ounce) packages Pre-cooked microwavable brown rice
  • 3/4 cup Frozen green peas
  • 1 tbsp Soy sauce
  • 1 tsp Rice vinegar
  • 1/4 tsp Freshly ground black pepper
  • 1 tbsp Toasted sesame seeds (optional), or as desired
  • 1/4 cup Sriracha mayonnaise (optional), or as desired
  • 1 scallion,sliced (optional), or as desired

Notes

  1. Preheat your air fryer to the appropriate temperature.
  2. In a large skillet, heat the canola oil over medium heat. Add the chopped onion, carrot, and half of the kosher salt. Cook for about 3-4 minutes until the vegetables are tender.
  3. Push the vegetables to one side of the skillet and pour the lightly beaten eggs onto the other side. Stir the eggs gently until they are scrambled and cooked through.
  4. Add the raw shrimp to the skillet and cook for 2-3 minutes, or until they turn pink and are cooked thoroughly.
  5. Meanwhile, microwave the pre-cooked brown rice according to the instructions on the package.
  6. Add the microwaved brown rice, frozen green peas, soy sauce, rice vinegar, remaining kosher salt, and black pepper to the skillet. Stir everything together and cook for an additional 2-3 minutes, allowing the flavors to meld.
  7. Once the fried rice is cooked, transfer it to the preheated air fryer basket. Cook for about 5 minutes, shaking the basket halfway through, until the rice is crispy and heated through.
  8. Remove the air fryer basket and transfer the fried rice to a serving dish. Sprinkle with toasted sesame seeds, if desired.
