Blue Cheese Broiled Tomatoes

Ingredients

  • 4 large Tomatoes - 4 large
  • 1 tsp Sugar - 5 ml
  • 1/2 tsp Dried Leaf Basil - 2 ml
  • 1/4 tsp Salt - 1 ml
  • dash Pepper - dash
  • 1 cup Soft Breadcrumbs - 250 ml
  • 2 tbsp Melted butter - 30 ml
  • 1/4 cup Crumbled Blue Cheese - 60 ml

Notes

To prepare this dish, start by cutting off the stem ends of tomatoes and slicing each tomato into 2 thick slices. Place the tomato slices on a broiler rack. In a small bowl, combine sugar, basil, salt, and pepper, and sprinkle a little of this mixture on each tomato slice. Place the tomato slices under a hot broiler and broil for about 2 minutes.
In another bowl, melt butter and add bread crumbs, tossing lightly with a fork. Add blue cheese and toss again lightly. Spoon this mixture onto the tomato slices and place them back under the broiler until the crumbs are nicely browned, which should take about 1 minute.
Serve the dish immediately for a delicious and flavorful appetizer or side dish.
