Cheesy Potatoes

The recipe involves frying bacon until crispy, then crumble it. Sliced potatoes and onion are added to a large piece of aluminum foil, followed by the bacon bits, cheese, salt, pepper, chervil, and butter. The ingredients are tossed together lightly and wrapped in the foil, then cooked on hot coals for about an hour or until tender. The package should be turned often during cooking. An oven can also be used instead of hot coals.

  • wrapping Paper
  • frying pan or skillet
  • paper towels

Ingredients

  • 4 slices Bacon - 4 slices
  • 3 large Baking Potatoes - 3 large
  • 1 large Onion, slices - 1 large
  • 1 cup 1/2 - inch (1.25 - cm) Cubes Processed Cheese - 250 ml
  • 3/4 tsp Salt - 3 ml
  • 1/4 tsp Pepper - 1 ml
  • 1/2 tsp Dried Leaf Chervil - 2 ml
  • 2 tbsp Butter Or Margarine - 30 ml
  • 1 tbsp Bacon fat - 15 ml

Notes

Begin by frying bacon until crisp. Drain on paper toweling and crumble into small bits. Peel and slice potatoes and place them onto a large piece of doubled heavy-duty aluminum foil. Separate an onion and add it to the potatoes along with the bacon bits, cheese, salt, pepper, and chervil. Gently toss all ingredients together to combine. Dot with butter or margarine, and drizzle the bacon fat over everything. Wrap the foil loosely around the potatoes, making double folds to seal well.
To cook, place the foil-wrapped potatoes about 4 inches (10 cm) from hot coals and cook for approximately 1 hour or until tender, turning the package often. Alternatively, you can bake the potatoes in an oven at 400 °F (205 °C) for about the same amount of time, if desired. This recipe makes for a delicious and easy side dish that's perfect for any occasion.
