Equipment

  • mixing bowls
  • Electric mixer (or hand mixer)
  • Measuring cups and spoons
  • 9x13-inch Baking Pan
  • Wire Rack
  • Whisk
  • Spatula or Spoon
  • oven mitts

Ingredients

For the Crust

  • 1 cup Butter Softened
  • 1 3/4 cup White Sugar
  • 1/2 tsp Salt
  • 3 Eggs
  • 1 1/2 tsp Vanilla
  • 2 1/2 cups All-Purpose Flour
  • 21 oz Cherry Pie Filling

For the Glaze

  • 1 cup Powdered Sugar
  • 1/2 tsp Vanilla
  • 1 tsp Milk

Instructions

Preheat the Oven:

  • Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.

Prepare the Crust:

  • In a large mixing bowl, cream together the softened butter, white sugar, and salt until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract. Gradually add the all-purpose flour, mixing until just combined.

Assemble the Bars:

  • Press 2/3 of the crust mixture into the bottom of the prepared baking pan to form an even layer. Spread the cherry pie filling evenly over the crust.

Top with Remaining Crust:

  • Drop spoonfuls of the remaining 1/3 of the crust mixture over the cherry pie filling. It doesn't need to be perfect; the crust will spread and bake together.

Bake:

  • Bake in the preheated oven for 45-50 minutes or until the top is golden brown.

Prepare the Glaze:

  • While the bars are baking, prepare the glaze by whisking together powdered sugar, vanilla, and milk until smooth.

Cool and Glaze:

  • Allow the bars to cool completely in the pan on a wire rack. Once cooled, drizzle the glaze over the top.

Cut and Serve:

  • Cut into squares and serve. Enjoy your delicious Cherry Pie Bars!

Notes

  1. Customization: Feel free to experiment with different fruit fillings, such as blueberry or raspberry, for a variety of flavor options.
  2. Storage: Store leftover Cherry Pie Bars in an airtight container at room temperature for up to 2 days. For longer storage, refrigerate for up to a week.
  3. Freezing: These bars freeze well. Wrap individual portions or the whole batch tightly in plastic wrap and aluminum foil before freezing. Thaw in the refrigerator before serving.
  4. Crust Texture: For a crisper crust, pre-bake the crust for 8-10 minutes before adding the cherry filling. This can help maintain a firmer texture.
  5. Glaze Consistency: Adjust the consistency of the glaze by adding more powdered sugar for a thicker glaze or more milk for a thinner one.
  6. Creative Presentation: Cut the bars into different shapes or sizes for a creative presentation. Dusting the top with a bit of powdered sugar can add an elegant touch.
  7. Serve with: Enhance the experience by serving each slice with a scoop of vanilla ice cream or a dollop of whipped cream.
  8. Room Temperature Eggs: Ensure that the eggs are at room temperature to achieve a smoother incorporation into the batter.
  9. Patience is Key: Allow the bars to cool completely before cutting to ensure clean slices. This also allows the flavors to set and intensify.
  10. Adapt to Dietary Preferences: Modify ingredients to suit dietary preferences, such as using a gluten-free flour blend or a plant-based butter alternative for a vegan version.
