Ingredients

  • 2 tbsp Vegetable oil
  • 2 Onions, minced
  • 2 Cloves of garlic, minced
  • 2 tsp Fresh ginger root, finely chopped
  • 6 whole cloves
  • 2 sticks (2 inches each) of Cinnamon, crushed
  • 1 tsp Ground cumin
  • 1 tsp Ground coriander
  • Salt, to taste
  • 1 tsp Cayenne pepper
  • 1 tsp Ground turmeric
  • 2 cans (15 ounces each) of garbanzo beans (chickpeas)
  • 1 cup Chopped fresh cilantro

Notes

  1. Heat the vegetable oil in a large skillet or pot over medium heat.
  2. Add the minced onions, minced garlic, and chopped ginger root to the skillet. Sauté until the onions become translucent and lightly browned.
  3. Add the whole cloves, crushed cinnamon sticks, ground cumin, ground coriander, and a pinch of salt to the skillet. Stir and cook for about a minute until the spices become fragrant.
  4. Sprinkle in the cayenne pepper and ground turmeric. Stir well to coat the onions and spices evenly.
  5. Drain and rinse the canned garbanzo beans. Add them to the skillet and stir to combine with the onion and spice mixture.
  6. Reduce the heat to low and simmer the chickpea curry for about 10 minutes, allowing the flavors to meld together. If the mixture becomes too dry, you can add a splash of water or vegetable broth.
  7. Remove the skillet from the heat and stir in the chopped fresh cilantro.
  8. Serve the flavorful and aromatic Chickpea Curry hot, accompanied by steamed rice or naan bread.
