Ingredients
- 2 tbsp Vegetable oil
- 2 Onions, minced
- 2 Cloves of garlic, minced
- 2 tsp Fresh ginger root, finely chopped
- 6 whole cloves
- 2 sticks (2 inches each) of Cinnamon, crushed
- 1 tsp Ground cumin
- 1 tsp Ground coriander
- Salt, to taste
- 1 tsp Cayenne pepper
- 1 tsp Ground turmeric
- 2 cans (15 ounces each) of garbanzo beans (chickpeas)
- 1 cup Chopped fresh cilantro
Notes
- Heat the vegetable oil in a large skillet or pot over medium heat.
- Add the minced onions, minced garlic, and chopped ginger root to the skillet. Sauté until the onions become translucent and lightly browned.
- Add the whole cloves, crushed cinnamon sticks, ground cumin, ground coriander, and a pinch of salt to the skillet. Stir and cook for about a minute until the spices become fragrant.
- Sprinkle in the cayenne pepper and ground turmeric. Stir well to coat the onions and spices evenly.
- Drain and rinse the canned garbanzo beans. Add them to the skillet and stir to combine with the onion and spice mixture.
- Reduce the heat to low and simmer the chickpea curry for about 10 minutes, allowing the flavors to meld together. If the mixture becomes too dry, you can add a splash of water or vegetable broth.
- Remove the skillet from the heat and stir in the chopped fresh cilantro.
