Easy Fried Rice
The recipe involves cooking rice in boiling water for 12 minutes, draining it and leaving it to cool. In a non-stick wok or large frying pan, an omelette is made by swirling eggs and cooking for 2 minutes. The omelette is then cut into strips. Bacon is added to the wok and cooked until golden, followed by the addition of carrots, shallots, peas, and rice, which are stir-fried for 3-4 minutes. Cooked egg and soy sauce are added to the mixture and stirred until heated through. The dish is then sprinkled with sesame seeds and extra shallots as garnish before serving immediately.

- 1 cup Long Grain Rice
- 2 tsp Vegetable Oil
- 2 Egg
- 2 Bacon Rashers - Chopped
- 1 Carrot
- 2 Shallots
- 1/2 cup Frozen Peas
- 1 tbsp Soy Sauce

To cook the rice, bring a large saucepan of water to a boil and add the rice. Let it cook for around 12 minutes or until it becomes tender. Then, drain the water and allow the rice to cool down.
In a non-stick wok or large frying pan over medium heat, heat some oil and add the eggs. Swirl the eggs around the base to create an omelette, and cook for approximately 2 minutes or until it sets. Once done, transfer the omelette to a chopping board, allow it to cool down slightly, and then cut it into short strips.
Next, add bacon to the same wok and cook until it turns light golden in color, which should take around 4 minutes. After that, stir-fry the carrots for 1 minute, followed by adding shallots, peas, and rice. Cook and stir the mixture for 3-4 minutes. Then, add the cooked egg and soy sauce, and stir until it's heated through. To finish, sprinkle some sesame seeds over the top and add extra shallots as garnish. Serve the dish immediately.
