Ingredients

  • 8 Lamb chops
  • 1 pound Broccolini, ends trimmed
  • 2 tbsp Olive oil
  • Salt and pepper, to taste
  • ½ cup Fresh mint leaves, chopped
  • ½ cup Fresh parsley leaves, chopped
  • 3 cloves Garlic minced
  • ¼ cup Red wine vinegar
  • ½ cup Olive oil
  • Salt and pepper, to taste

Notes

  1. Preheat your grill to medium-high heat.
  2. Season the lamb chops with olive oil, salt, and pepper, making sure they are evenly coated.
  3. Grill the lamb chops for about 4-5 minutes per side, or until they reach your desired level of doneness. For medium-rare, the internal temperature should be around 145°F (63°C).
  4. While the lamb chops are grilling, prepare the Mint Chimichurri Sauce. In a bowl, combine the chopped mint, parsley, minced garlic, red wine vinegar, and olive oil. Mix well until everything is thoroughly combined. Season with salt and pepper to taste.
