- 8 Lamb chops
- 1 pound Broccolini, ends trimmed
- 2 tbsp Olive oil
- Salt and pepper, to taste
- ½ cup Fresh mint leaves, chopped
- ½ cup Fresh parsley leaves, chopped
- 3 cloves Garlic minced
- ¼ cup Red wine vinegar
- ½ cup Olive oil
- Salt and pepper, to taste
Notes
- Preheat your grill to medium-high heat.
- Season the lamb chops with olive oil, salt, and pepper, making sure they are evenly coated.
- Grill the lamb chops for about 4-5 minutes per side, or until they reach your desired level of doneness. For medium-rare, the internal temperature should be around 145°F (63°C).
- While the lamb chops are grilling, prepare the Mint Chimichurri Sauce. In a bowl, combine the chopped mint, parsley, minced garlic, red wine vinegar, and olive oil. Mix well until everything is thoroughly combined. Season with salt and pepper to taste.
