- 14 oz-can Tomato Sauce - 389-ml can
- 1 cup Water - 250 ml
- 1/2 tsp Powdered Ginger - 2 ml
- 2 tsp Brown Sugar - 10 ml
- 1/4 cup Lemon Juice - 60 ml
- small piece Bay Leaf - Smal piece
- 1/2 tsp Salt - 2 ml
- 1/8 tsp Pepper - 0.5 ml
- 8 large Cabbage Leaves (see note) - 8 large
- 2 cups Ground Cooked Ham - 500 ml
Notes
To make cabbage rolls, start by heating oil in a heavy skillet and cooking chopped onion and green pepper until soft. Add tomato sauce, water, ginger, sugar, lemon juice, bay leaf, salt, and pepper, and simmer for 15 minutes. Meanwhile, blanch cabbage leaves in boiling water for 2 minutes, then drain and remove the tough veins. Combine ham, potato, chopped onion, mustard, cloves, and egg, and place a scant 1/3 cup of the mixture on each cabbage leaf. Roll up the leaves tightly, tucking in the ends. Add the cabbage rolls to the simmering sauce, cover the pan, and cook for 30 minutes. Then add carrots and continue simmering for 15 minutes, followed by green peppers for 10 minutes. Add water to the sauce if needed. To make it easier to remove the cabbage leaves, core the cabbage and pour boiling water into the hole, carefully removing the leaves as they become limp. This recipe yields 8 cabbage rolls.
