Ingredients

  • Light corn syrup for rimming glasses
  • Coconut flakes for rimming glasses
  • 1 cup Crushed Ice
  • 1/2 cup Pineapple Juice
  • 1/4 cup Blue Curacao Liquor
  • 1/4 cup Light Rum
  • 2 tbsp Cream of Coconut (not coconut milk)

Instructions

  • Rim the edges of your glasses: Pour a thin layer of light corn syrup onto a small plate. On another plate, spread out coconut flakes. Dip the rim of each glass into the corn syrup, then into the coconut flakes, coating the rim evenly.
  • Fill a cocktail shaker with crushed ice.
  • Pour in the pineapple juice, Blue Curacao liquor, light rum, and cream of coconut.
  • Shake the mixture vigorously for about 15-20 seconds until well combined and chilled.
  • Fill your prepared glasses with crushed ice.
  • Strain the cocktail mixture into the glasses, dividing it evenly between them.
  • Optionally, garnish with a slice of pineapple or a wedge of lime for an extra touch.
