- Coconut flakes for rimming glasses
- 1 cup Crushed Ice
- 1/2 cup Pineapple Juice
- 1/4 cup Blue Curacao Liquor
- 1/4 cup Light Rum
- 2 tbsp Cream of Coconut (not coconut milk)
Instructions
- Rim the edges of your glasses: Pour a thin layer of light corn syrup onto a small plate. On another plate, spread out coconut flakes. Dip the rim of each glass into the corn syrup, then into the coconut flakes, coating the rim evenly.
- Fill a cocktail shaker with crushed ice.
- Pour in the pineapple juice, Blue Curacao liquor, light rum, and cream of coconut.
- Shake the mixture vigorously for about 15-20 seconds until well combined and chilled.
- Fill your prepared glasses with crushed ice.
- Strain the cocktail mixture into the glasses, dividing it evenly between them.
- Optionally, garnish with a slice of pineapple or a wedge of lime for an extra touch.
Notes
- Cream of Coconut: Be sure to use cream of coconut, not coconut milk, for its thicker consistency and sweeter taste.
- Rimming the Glasses: Take your time rimming the glasses with corn syrup and coconut flakes for a beautiful presentation. Press gently to ensure the flakes stick well.
- Shaking: Shake the cocktail vigorously with crushed ice to properly chill and combine the ingredients.
- Adjusting Sweetness: Taste the mixture before serving. If you prefer a sweeter cocktail, you can add a touch more cream of coconut or a splash of simple syrup.
- Consistency: If the cocktail is too thick after shaking, you can strain it to remove any excess ice or pulp.
- Garnish: Adding a slice of pineapple or a wedge of lime not only looks great but also adds a hint of freshness to each sip.
