This recipe involves cooking a leg of lamb in the oven. To prepare the lamb, it is seasoned with a mixture of olive oil, garlic, salt, pepper, and parsley. Thin strips of ham are then placed in deep gashes made in the lamb, and the remaining seasoning mixture is rubbed all over the meat. Ingredients

  • 6 to 7 -lb Leg of Lamb - 2.7 to 3.2 -kg
  • 2 tbsp Olive Oil - 30 ml
  • 2 cloves Garlic, crushed - 2 cloves
  • 1 tsp Salt - 5 ml
  • 1/2 tsp Coarse - Cracked Pepper - 2 ml
  • 1 tbsp Finely chopped Parsley - 15 ml
  • 2 thin slices Cooked Ham - 2 thin slices

Notes

To cook a delicious leg of lamb, preheat the oven to 350 °F (160 °C). Place the leg of lamb on a rack in a roasting pan. In a bowl, mix together olive oil, garlic, salt, pepper, and parsley. Spread some of the mixture onto thin strips of ham. Cut deep gashes all over the leg of lamb using a sharp knife, and insert a strip of ham into each gash. Rub the remaining oil mixture all over the lamb. Roast until the meat thermometer reads 170 °F (76 °C) for pink, which should take approximately 25 minutes per pound (450 g). Alternatively, if you prefer your lamb well done, roast until the thermometer reads 180 °F (82 °C), which should take around 30 minutes per pound (450 g).
