- 2 tbsp Olive Oil - 30 ml
- 2 cloves Garlic, crushed - 2 cloves
- 1 tsp Salt - 5 ml
- 1/2 tsp Coarse - Cracked Pepper - 2 ml
- 1 tbsp Finely chopped Parsley - 15 ml
- 2 thin slices Cooked Ham - 2 thin slices

Rub the remaining oil mixture all over the lamb. Roast until the meat thermometer reads 170 °F (76 °C) for pink, which should take approximately 25 minutes per pound (450 g). Alternatively, if you prefer your lamb well done, roast until the thermometer reads 180 °F (82 °C), which should take around 30 minutes per pound (450 g).
