Ingredients

  • boneless, skinless chicken breasts
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 1 tsp dried Italian seasoning
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 1 cup couscous
  • 1/4 cup chicken broth
  • Fresh parsley, chopped (for garnish)

Notes

  1. Preheat your oven to 400°F (200°C) to ensure it's ready for baking.
  2. In a shallow bowl or plate, combine the grated Parmesan cheese, breadcrumbs, dried Italian seasoning, garlic powder, salt, and pepper. Mix the ingredients well.
  3. Season the chicken breasts with salt and pepper on both sides.
  4. Dip each chicken breast into the Parmesan mixture, pressing firmly to coat them evenly on both sides.
  5. Heat the olive oil in an oven-safe skillet over medium-high heat. Once the oil is hot, add the coated chicken breasts to the skillet.
  6. Sear the chicken for approximately 3-4 minutes on each side, until the Parmesan crust turns a lovely golden brown.
  7. Transfer the skillet to the preheated oven and bake the chicken for about 15-20 minutes, or until the internal temperature reaches 165°F (74°C).
  8. While the chicken is baking, prepare the couscous following the instructions on the package. Typically, you would bring the chicken broth to a boil, add the couscous, remove it from the heat, cover it, and let it sit for 5 minutes. Once done, fluff the couscous with a fork.
  9. Once the chicken is cooked, remove it from the oven and allow it to rest for a few minutes.
  10. Serve the Parmesan-crusted chicken breasts over a bed of fluffy couscous. Sprinkle freshly chopped parsley on top as a garnish.
