Peppermint Chocolate Bark

  • Snowflake-shaped molds or cookie cutters
  • Knife or hands for breaking any excess bark into pieces
  • Airtight container for storage

Ingredients

  • 8 oz milk or dark chocolate
  • 8 oz white chocolate
  • 2 tsp vegetable oil
  • 1/2 tsp peppermint extract
  • Candy canes or peppermint candies (crushed)

Instructions

  • Line a baking sheet or tray with parchment paper or a silicone baking mat.
  • In a microwave-safe bowl, melt the milk or dark chocolate. Start by microwaving it in 20-30 second intervals, stirring between each interval, until the chocolate is fully melted and smooth. Be careful not to overheat it.
  • Once the milk or dark chocolate is melted, add 1 tsp of vegetable oil and 1/4 tsp of peppermint extract. Stir until well combined.
  • Pour the melted dark chocolate into snowflake-shaped molds or use snowflake-shaped cookie cutters on the prepared baking sheet to shape the bark. Make sure to create thin, even layers.
  • Place the baking sheet or molds in the refrigerator to allow the dark chocolate to set. This will take about 15-20 minutes.
  • While the dark chocolate is setting, repeat the melting process with the white chocolate in a separate bowl. Add the remaining 1 tsp of vegetable oil and 1/4 tsp of peppermint extract, and stir until well combined.
  • Once the dark chocolate has set, remove the snowflake-shaped bark from the molds or cutters.
  • Pour the melted white chocolate over the dark chocolate snowflakes and use a spatula to spread it evenly.
  • While the white chocolate is still wet, sprinkle the crushed candy canes or peppermint candies over the top of each snowflake.
  • Return the snowflake-shaped bark to the refrigerator and allow it to set completely, which will take another 20-30 minutes.
  • Once the Peppermint Chocolate Bark snowflakes are fully set, remove them from the molds or cutters and arrange them on a serving platter.
  • Store the Peppermint Chocolate Bark snowflakes in an airtight container in the refrigerator. They make a great holiday treat or gift!

Notes

  • You can adjust the level of peppermint flavor to your liking by adding more or less peppermint extract. Be cautious not to overdo it, as peppermint extract can be quite strong. Taste the chocolate mixture after adding the extract and adjust as needed.
  • When working with chocolate, be careful not to overheat it during the melting process. Overheated chocolate can become grainy or lose its smooth texture. Use short, controlled bursts in the microwave and stir between each interval to ensure even melting.
  • It's important to crush the candy canes or peppermint candies finely for a nice texture. You can do this by placing them in a plastic bag and crushing them with a rolling pin or using a food processor.
  • You can get creative with the toppings. In addition to crushed candy canes, consider adding chopped nuts, dried fruits, or other festive sprinkles for added texture and flavor.
  • Store the Peppermint Chocolate Bark in an airtight container in the refrigerator to prevent it from melting at room temperature. It can be stored for up to two weeks, making it a great make-ahead treat for the holiday season.
