Directions
  • Sauté the Aromatics
    • In a large pot, heat olive oil over medium heat.

    • Add the onion and garlic, and sauté for 4–5 minutes, until softened and fragrant.

  • Add Vegetables
    • Add the potatoes, broccoli stalks and florets, and celery root.

    • Stir everything together and cook for another 3–4 minutes to enhance the flavors.

  • Simmer
    • Pour in the vegetable stock.

    • Bring to a boil, then reduce heat and simmer for 20–25 minutes, or until all vegetables are fork-tender.

  • Blend the Soup
