Sausage and Cabbage

Ingredients

  • 1 lb Pork Sausages - 450 ml
  • 1 large Firm Cabbage, Cut into Quarters
  • Boiling Water
  • 3 tbsp Butter - 45 ml
  • 3 tbsp Flour - 45 ml
  • 1 tsp Salt - 5 ml
  • 1/8 tsp Pepper - 0.5 ml
  • 2 cups Milk - 500 ml
  • 1 1/2 cups Soft Bread crumbs - 375 ml
  • 3 tbsp Butter, Melted - 45 ml

Notes

To prepare this dish, preheat the oven to 350°F (175°C) and grease a glass baking dish measuring about 13 x 9 x 2 inches (33 x 23 x 5 cm). In a heavy skillet, add a little boiling water to the sausages and simmer until the water evaporates, then fry until well browned and cooked through. Cut each sausage into 3 pieces. In a large saucepan, cook the cabbage in boiling water until tender, about 20 minutes. Lift out the cabbage pieces, chop coarsely, and place a layer in the prepared baking dish. Top with the sausage pieces and remaining cabbage.
In a saucepan, melt 3 tbsp (45 ml) of butter, sprinkle in flour, salt, and pepper, and let it bubble. Remove from heat and add milk all at once. Stir until blended, then return to moderate heat and cook until boiling, thickened, and smooth while stirring constantly. Pour the mixture slowly over the cabbage-sausage mixture, so it runs through the meat and vegetables. Combine bread crumbs and 3 tbsp (45 ml) melted butter and sprinkle over the top. Bake for 30 minutes or until crumbs are browned, and the sauce is bubbling. Serve immediately.
