- 1 chopped onion
- 1 poblano or bell pepper, finely chopped

- ½ cup of grated Cheddar cheese (approximately 2 ounces)
- 2 scallions, thinly sliced
Instructions
- In a large, heavy-bottomed pot or Dutch oven, heat 1 tablespoon of olive oil over medium heat.
- Add the finely diced carrots, chopped onion, and finely chopped poblano or bell pepper. Sauté for about 5 minutes or until the vegetables have softened and the onion turns translucent.
- Crumble the ground beef into the pot and cook, breaking it apart with a spoon, until it's browned and cooked through. This should take about 5-7 minutes.
- Stir in the tomato paste and chili powder. Cook for another 2 minutes, allowing the flavors to meld.
- Add the rinsed black beans to the pot, along with some kosher salt and freshly ground black pepper to taste. Stir well to combine all the ingredients.
- Reduce the heat to low, cover the pot, and let the chili simmer for about 20 minutes. Stir occasionally to ensure even cooking.
- Stir in the corn kernels and continue to simmer for an additional 5 minutes, or until the corn is heated through.
