  • 600 grams Pork Shoulder, cut into small bite-sized pieces
  • 2 tsp Sri Lankan Roasted Curry Powder
  • 1 tsp Sri Lankan Roasted Chili Powder
  • 2 tsp Garcinia Cambogia Paste (goraka)
  • 3 Cardamoms, crushed or powdered
  • 3 cloves Crushed or powdered
  • 1 1/4 tsp Salt
  • 4 cloves Garlic, minced
  • 1 thumb-sized piece Ginger (about 2cm), minced
  • 1/3 cup Onion, finely chopped
  • 1 4-inch piece Lemon Grass (white part), lightly crushed
  • 1 small Pandan Leaf, broken into pieces
  • 1 sprig Curry Leaves
  • 2 tsp Chili Powder
  • 2 tsp Sri Lankan Unroasted Curry Powder
  • 1 tbsp Coconut Oil
  • 1/4 cup Water

Notes

  1. Marinate the pork: In a bowl, combine the pork with Sri Lankan Roasted Curry Powder, Sri Lankan Roasted Chili Powder, Garcinia Cambogia Paste, crushed cardamoms, crushed cloves, and salt. Mix well, ensuring the pork is evenly coated with the spices. Let it marinate for about 30 minutes for the flavors to infuse.
  2. Prepare the aromatics: In a mortar and pestle, crush the garlic and ginger to form a paste. Alternatively, you can use a food processor for this step.
  3. Sauté the onions and aromatics: In a large pot or skillet, heat the coconut oil over medium heat. Add the finely chopped onions and sauté until they turn golden brown. Stir in the garlic-ginger paste and cook for a minute until the aroma is released.
