Ingredients

  • 1 large red pepper, core removed and roughly chopped
  • 1/2 small red onion, roughly chopped
  • 1/2 cup raw almonds
  • 1/4 cup pepitas (pumpkin seeds)
  • 1/4 cup hemp seed hearts
  • 2 tablespoons ground flaxseed meal, chia seeds, or additional hemp seed hearts
  • 2 cloves garlic
  • 1 teaspoon kosher salt
  • 1 1/4 teaspoons cumin
  • 3/4 teaspoon chili powder
  • 1/4 teaspoon smoked paprika
  • 1 can black beans (15 ounces), rinsed and drained
  • 1/2 cup old-fashioned rolled oats (gluten-free if needed)

Instructions

  • Begin by preheating your oven to 375°F (190°C) and lining a baking sheet with parchment paper.
  • In a food processor, combine the roughly chopped red pepper, red onion, raw almonds, pepitas, hemp seed hearts, ground flaxseed meal (or chia seeds), garlic cloves, kosher salt, cumin, chili powder, and smoked paprika. Pulse the mixture until it becomes a coarse, grainy texture.
  • Add the rinsed and drained black beans to the food processor. Pulse again until the beans are partially incorporated into the mixture. You want some texture remaining.
  • Transfer the mixture to a mixing bowl and fold in the old-fashioned rolled oats. This will help bind the ingredients together.
  • Form the mixture into burger patties, using your hands to shape them to your desired thickness and size. Place the patties onto the prepared baking sheet.
  • Bake the burger patties in the preheated oven for approximately 20-25 minutes, or until they are firm and the edges have a slight crispness.
  • Serve your vegan burger patties on whole grain buns, and garnish with your favorite toppings such as lettuce, tomato, avocado, and vegan condiments.
