Instructions

  • Preheat your oven to 350°F (175°C) and lightly grease a muffin tin with cooking spray or oil.
  • In a mixing bowl, combine the diced red bell pepper, finely chopped spring onions, halved cherry tomatoes, and chopped spinach. Mix them together to create a colorful and flavorful veggie mixture.
  • In a separate bowl, crack the eggs and beat them until well combined. Add the salt and mix it in.
  • Pour the beaten eggs over the veggie mixture in the first bowl. Optionally, add hot sauce and/or curry powder for an extra kick and delightful flavor. Stir everything gently until the veggies are evenly coated with the egg mixture.
  • Carefully pour the egg and vegetable mixture into each muffin cup, filling them about two-thirds full.
