Zucchini Pasta

Ingredients

  • 1 sized zucchinis
  • Noodles
  • 1 olive oil
  • 2 garlic, minced
  • Salt and pepper to taste
  • grated Parmesan cheese, chopped herbs, red pepper flakes

Notes

  1. Wash the zucchini and trim off the ends. You can peel the zucchini if desired, but it's not necessary.
  2. Use a spiralizer or a julienne peeler to create long, thin strands of zucchini. If you don't have either tool, you can also use a vegetable peeler to make wide, ribbon-like noodles.
  3. Heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  4. Add the zucchini noodles to the skillet and season with salt and pepper. Cook for about 2-3 minutes, stirring occasionally, until the zucchini noodles are just tender. Be careful not to overcook them, as they can become mushy.
  5. Once the zucchini noodles are cooked, remove from heat. You can serve them as is or add your desired toppings such as grated Parmesan cheese, chopped herbs (like basil or parsley), or a sprinkle of red pepper flakes for some heat.
  6. Toss the zucchini noodles gently to combine the flavors and toppings.
  7. Serve the zucchini pasta immediately as a light and healthy main dish or as a side dish alongside your favorite protein or sauce.
