Ingredients

  • 400 grams Beef, cut into small cubes
  • 2 tsp White Vinegar
  • 2 tsp Sri Lankan Roasted Curry Powder
  • ½ tsp Black Pepper Powder
  • ¼ tsp Turmeric pPowder
  • ½ tsp Salt

For the Curry:

  • 2 tbsp Coconut Oil
  • ¼ tsp Cumin seeds
  • 2 tsp Red chili powder (or substitute with paprika for milder heat)
  • 3 Cardamom pods
  • 3 Cloves
  • 1 small sprig Curry leaves
  • 1 Pandan leaf, cut into pieces
  • 1 Cinnamon stick (2 inches long)
  • ¼ tsp Fenugreek seeds
  • 4 cloves Garlic, chopped
  • cup Onion, finely chopped
  • 1 cup Coconut milk
  • ½ cup Coconut milk
  • Water, as needed
  • Salt, to taste

Instructions

  • Marinate the Beef:
    In a mixing bowl, combine the beef cubes with white vinegar, Sri Lankan roasted curry powder, black pepper powder, turmeric powder, and salt. Mix well to coat the beef evenly. Cover the bowl and let it marinate for at least 30 minutes (or longer if time permits) to allow the flavors to infuse into the meat.
  • Prepare the Curry:
    In a large, deep pan or pot, heat coconut oil over medium heat.
    Add cumin seeds, red chili powder (or paprika), cardamom pods, cloves, curry leaves, pandan leaf, cinnamon stick, and fenugreek seeds. Sauté them for a minute or until the spices release their aroma.
  • Add the Beef:
    Now, add the marinated beef to the pan and stir-fry for about 5 minutes or until the meat is lightly browned.
  • Incorporate Garlic and Onion:
    Stir in the chopped garlic and finely chopped onions. Continue to cook until the onions become translucent and the garlic turns golden brown.
